WhoooHoooo! Friday is back – it’s here, we can rejoice and get excited for our weekends and sip fruity cocktails (like these mixed berry mojitos) in the sun with our friends – at least that’s what I’ll be doing!!!
I love my job (my real-world day job that doesn’t include standing on my table and taking pictures of food) but I am always glad to see Friday. It seems like you spend the whole week looking for it and luckily I’ve been so crazy busy at my normal office, that it comes rather quickly. But you know what made me feel really sad this past week? On a few different occasions I heard people say – I can’t wait for cool weather and fall or I can’t wait to pull out my big cozy sweaters.
I don’t know why but it made me so sad. Maybe because I LOVE summer – and this is probably why I’ve chosen to live in Los Angeles where it is summer year round. But it made me think, why are we always looking forward to the future and not enjoying what’s going on that day. And then it brings me back to my week, where I’m always looking forward to Friday.
It definitely reminded me that I should enjoy all the days of the week, not just Friday, Saturday and Sunday.
And now to these beautiful, fruity, mixed berry mojitos. I love mojitos, I used to make them like crazy about three years ago. Ask any of my friends, and if there was a bbq or dinner party, I would mixing up mojitos in the kitchen for everyone. It made for some fun nights (and not so fun mornings).
They’re easy to make, have such a fresh bright flavor from the mint and lime juice, plus you can add what ever fruit is in season at the moment to put a little twist on it.
So here’s to a happy weekend and enjoying the moment – cheers!
- 2 ounces white rum
- 6 fresh mint leaves
- 1 ounce fresh lime juice
- 3-4 mixed berries of choice
- 2 teaspoons sugar
- club soda
- mint leaves, for garnish
- lime wedge, for garnish
- In a tall glass, combine rum, mint leaves, lime juice, berries and sugar.
- Muddle together until the berries are broken down and mint leaves become fragrant.
- Fill glass with ice and fill with club soda.
- Stir with a cocktail spoon.
- Garnish with mint leaves and a lime wedge.
- Serve immediately.
