Remember yesterday when I made those crispy, crunchy homemade chips? Good – because they are the base for today’s totally calorie splurge. Hey – you gotta do it every once in a while, right?!?
These loaded carne asada chips are perfect for a game day appetizer or when entertaining friends, but who am I kidding – I make stuff like this all the time in the middle of the week when I don’t feel like making a full on meal (remember these pulled pork leftover nachos). Don’t worry – my boyfriend has no issues with that!
So these, like all nachos are super simple and so very delicious! I started with a base of the homemade potato chips. What I loved about these chips is they stayed super crunchy even when I piled on all those delicious toppings. Nothing is worse than a soggy nacho chip – boo!
I piled mine way high, but you could also spread them out on a cookie sheet. Once you have your chips all laid out, then cover every square inch with cheese. And when in doubt, add more cheese. Then toss in the broiler (keep an eye on this or you’ll have burnt everything) and once all the cheese gets hot and bubbly pull those cheesy chips out and throw on all your other fixings.
I did big chunks of tomato, chopped green onion, sprigs of cilantro and grilled carne asada. I buy our carne asada at the meat counter of our local grocery store (I’m sure it’s easier to find in SoCal than other areas) but you could easily use any grilled steak or chicken, even big portabella mushrooms grilled up and sliced.
Of course I finish mine with a big scoop of guacamole, salsa on the side to dip in and some lime wedges to squeeze on top.
Loaded Carne Asada Chips = Heaven in your mouth! At least a party in your mouth!
- In an oven safe bowl or on a cookie sheet, spread out your chips and sprinkle with cheese.
- Broil in the oven until the cheese is melted, being careful not to burn the cheese or chips.
- Once the cheese is melted, remove immediately and top with meat, tomatoes and scallions.
- Garnish with cilantro, salsa, guacamole, limes or any of your favorite toppings.
- Eat immediately! Try to share
